why do you drop the tooth count 1 on the front sprocket and add more to the rear sprocket

It's all about gearing for acceleration. Think of your bicycle - to accel faster, you drop the front sprocket down to the smallest ring, and the rear sprocket up to the biggest ring. Yes, you'll lose top speed, but you'll get to top speed way faster!
