do I need to glue left grips?

Yes, grip glue is required, but the good thing is Kuryakyn includes that with each set of grips. There's no need to purchase that separately.
I've ordered another set just like these that did not fit my bike just double checking to be sure these will indeed fit a 2004 Harley Davidson Dyna low rider

So long as you choose that 2004 FXDL when adding to your cart and have the stock style throttle cable setup you should have no problem with installation.
Do these come in 7/8 bar by 5 inch in length?

Unfortunately no, the Premium ISO grips only fit one inch handlebars common on Harley Davidson motorcycles. Kuryakyn does produce ISO Grips to fit a variety of Japanese bikes, which are often fitted with 7/8" handlebars. Also, if it's the Kuryakyn throttle boss that you're after, you can add those to any set of ISO grips from Kuryakyn.
