Does this book give explain in specific to model and year? Or by serial # ?

In the middle of a clutch replacement friction plates and the sorts. Also need torgue specs.
If the book covers a range of models and/or years - if there are any differences in those machines with regard to service work, it will be laid out clearly so you can get the job done correctly.
Torque specs, tools needed &etc. are par for the course. You'll find all of that information in each book. The color pictures, in particular, are really nice to have!

You can expect to find everything you need to know about chassis maintenance and complete engine disassembly/build-up in this service manual. And best of all, the electrical diagrams are very descriptive - making that type of work rather easy to sort out.

Does this repair manual cover a valve adjustment procedure? does it also cover how to find top dead center on the ignition stroke of the piston?
Yes, the Haynes KTM 525 EXC shop manual does cover the valve measurement and adjustment procedure. Of course, to do that, you have to find TDC, so that's covered as well. Basically, it tells you everything you need to know about servicing the top end on your machine.
I know there is a list above, but I just want to be sure. Will this cover everything I need for a 1979 Sportster XLH 1000?

Basically, these manuals cover everything noted in the bullet points. Since the bikes didn't change too much over the 1970 to 2010 year range, you'll find a lot appropriate information for servicing your machine. While it doesn't cover things like a complete engine build from the ground up, it does a pretty good job on things that are known to fail on your bike.

We have Haynes repair manuals for 2001-2008 YZ250F models. In it, you will find all the information you need to completely rebuild the engine on your machine.

Haynes does not produce a manual that covers the '06 FXDL, but if you check out Clymer manual selection, they certainly have a book that'll cover everything you need.
I never can seem to find the right model listings online. There's every thing else but parts for the FLHPI so I'm skeptical when wanting to order stuff ...

Since the Harley Davidson FLHPI is the basically same machine as an FLHR, almost all parts will swap directly from an FLHR to an FLHPI with few exceptions. If you order parts for your bike for the same model year FLHR, you will no have a problem with fitment. The exceptions are mainly the seats as the fenders will be missing mount brackets for passenger portion. While this Haynes Shop repair manual will cover all the necessary repair and maintenance procedures on Harley Davidson models, it is not a factory Harley Davidson nor is not exclusive to the model specified in this listing. It contains information on a variety models that share the same engine.
