Is this shock a good replacement for a Kawasaki Z125 stretch to 7 inches? Also if the writer is only 120 pounds? Can it be adjusted to a lighter spring weight?

It'll certainly be a lot better than the original shock that's fitted to that bike! For your needs, I would recommend the heavier spring rate would probably be better since that extended swingarm puts a lot more force into the shock. Spring preload can be adjusted to lighten up the spring a little, but if that's not enough, you can certainly have springs changed by a competent suspension tuner.
